This fun variation on an individual “pizza” is a great way to help encourage your little one to eat their veggies. Calcium-rich mozzarella pairs well with low-calorie summer squash. Once cooked and cooled, cut into slices for little ones to grab and gobble up.
1⁄2 cup thinly sliced zucchini
1⁄2 teaspoon kosher salt
1 tablespoon olive oil
1⁄4 cup marinara sauce (such as Carrot Marinara Sauce)
1 (6-inch) whole wheat flatbread or pita bread
1⁄4 cup shredded mozzarella cheese
Preheat oven to 375°F. In a mixing bowl combine zucchini, salt, and olive oil; toss well. Spread marinara sauce over flatbread and top with an even layer of zucchini.
Sprinkle with cheese and bake for 12 to 15 minutes, until golden brown and cheese has melted.
