INGREDIENTS
- 2 tbsp. sesame seeds, toasted
- ¼ cup onion, sliced thinly
- ½ avocado, peeled, pitted and cut into cubes
- 2 tbsp. freshly squeezed lemon juice
- ½ tsp. low sodium soy sauce
- 2 cups carrots, grated
- 4 cups kale, stems removed and chopped finely

COOKING INSTRUCTIONS
- Take all the ingredients in a large salad bowl.
- Mash the avocado and mix it with the rest of the ingredients in the bowl.
- Serve when chilled for sometime.
