Shots of Chocolate

Makes 4

SPEEDY

When you’re doing COOK90 and dinner’s over, you’re immediately focused on the next meal: packing up your leftovers for tomorrow’s lunch or stirring together a jar of Overnight Oats (here) for breakfast. What you’re not doing is making a spur-of-the-moment batch of brownies for dessert.

That doesn’t work for a sugar fanatic like me, so one night I basically melted some chocolate, called it “shots” and boom—an easy COOK90 dessert was born.

These shots are so intense that you can’t drink them too quickly. This is a good thing for a weeknight. It keeps everybody at the table a little longer, dipping and sipping and putting off the dishes, talking, hanging out, and not worrying at all that tomorrow is Thursday.

4 ounces semisweet (about 65%) chocolate, finely chopped

¼ teaspoon kosher salt

¾ cup whole milk

Bourbon or rum (optional)

Shortbread or biscotti, for serving and dipping

In a large, heatproof bowl, combine the chocolate and salt.

In a small saucepan, bring the milk to a simmer over medium heat. Pour the milk over the chocolate mixture, let it sit for a minute or two, then use a rubber spatula to slowly stir the mixture until it is thick and shiny but still pourable. Divide the chocolate among four small cups or glasses, pour in shots of booze if you want to, and serve with shortbread on the side.
