Pack a basket with these flavorful subs and tote to your favorite picnic spot. All that’s needed is fresh air and sunshine for a memorable afternoon.
6 submarine sandwich rolls (each about 6 inches)
1/3 cup regular or light mayonnaise
3 tablespoons pesto
2 teaspoons balsamic vinegar
1/2 pound thinly sliced regular or low-sodium deli roasted turkey breast
1/4 pound thinly sliced hot capicola or low-sodium deli ham
1/4 pound thinly sliced sandwich pepperoni
1/4 pound provolone cheese
2 medium plum tomatoes, thinly sliced
1/8 teaspoon coarsely ground black pepper
2 cups lightly packed baby spinach
Cut rolls in half lengthwise. In a small bowl, whisk together mayonnaise, pesto, and vinegar. Spread on cut sides of rolls. Layer the bottom halves of rolls with turkey, ham, pepperoni, provolone cheese, and tomatoes. Sprinkle with pepper; top with baby spinach. Cover with tops of rolls. Serve immediately or wrap tightly and refrigerate up to four hours. Makes 6 servings.
