ORANGE-SPICED CIDER

A welcoming cup of perfectly spiced cider is just what’s needed to warm up a chilly

autumn afternoon.

 

 

8 cups apple cider

3 tablespoons firmly packed light brown sugar

2 (3- to 3 1/2-inches-each) cinnamon sticks, plus more serving (optional)

12 whole allspice berries

2 medium oranges

8 whole cloves

 

 

In a large saucepan, combine cider, brown sugar, 2 cinnamon sticks, and allspice berries. Using a wooden skewer, poke 8 evenly spaced holes around the center of one orange; insert cloves into holes. Cut a slice out of the orange to include all of the cloves; add to cider mixture. Cut the remaining orange into thin slices; add to cider mixture. Squeeze juice from the ends of the orange into cider mixture; add ends to cider mixture. Bring to a boil; reduce heat. Cover and simmer 10 minutes; remove from heat. Let stand 10 minutes. Pour cider through a strainer; discard oranges, cinnamon sticks, and allspice berries. Serve with cinnamon sticks, if desired. Makes 8 servings.
