INGREDIENTS

1/2 medium ripe avocado, smashed
4 slices multigrain bread, toasted
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 cup minced red onion
1 medium ripe tomato, sliced
6 ounces smoked salmon
1. Spread avocado on 2 slices of the bread. Season with salt and pepper and top each with minced onion.
2. Top each slice with the tomato slices and salmon and then remaining bread. Serve immediately.

Avocados are loaded with healthy fat. The type of fat found in avocados is also found in olive oil and walnuts. It is important to have fat in your diet, but make sure to vary the sources of these fats and not get them all from animal products, which are typically saturated fats. Saturated fats are unhealthier than most plant-based fats.
