1/2 tablespoon extra-virgin olive oil
1/4 cup peeled and finely chopped yellow onion
1 (1/2-pound) cooked ham steak
3 tablespoons orange marmalade
1 tablespoon reserved sweet potato liquid
1/8 teaspoon ground nutmeg
1/2 cup canned sweet potatoes, drained, reserving 1 tablespoon liquid
1/3 cup canned mandarin oranges, drained
1. In a large skillet, heat olive oil over medium heat. Add onion; cook and stir until crisp-tender, about 3–4 minutes. Add ham to skillet along with marmalade, reserved sweet potato liquid, and nutmeg. Cover and simmer 10 minutes over medium-low heat.
2. Turn ham steak, then add sweet potatoes to skillet; cover and simmer 5 minutes. Stir in mandarin oranges; cover and cook 2–4 minutes longer until hot. Serve immediately.
