INGREDIENTS

2 tablespoons butter
4 ounces smoked ham, chopped
6 large eggs, beaten
3 tablespoons store-bought pesto
1/8 teaspoon salt
1/8 teaspoon freshly ground black pepper
1. In a medium nonstick skillet, heat the butter over medium heat until it stops bubbling. Add the ham and sauté 1 minute.
2. Add the eggs and pesto and cook as you would scrambled eggs. Season with salt and pepper. Serve hot alone or on toast if desired.
EGG-CELLENT FACTS
Eggs are a great source of protein and healthy omega-3 fatty acids. The anatomy of an egg is quite interesting. The white is actually like amniotic fluid that protects the chick. The yolk is the food that the chick eats inside the shell before hatching. The little white squiggly thing on the yolk (called the chalaza) is actually what would be the chick if the egg were fertilized.
