CAVATELLI WITH WHITE BEANS AND ARUGULA

INGREDIENTS

Serves 2


4 tablespoons extra-virgin olive oil

2 cloves garlic, sliced

1/2 pound cavatelli pasta

1 (15.5-ounce) can small white beans, drained and rinsed

2 cups washed arugula leaves

1/2 cup shaved Parmesan cheese

1/8 teaspoon salt

1/8 teaspoon freshly ground black pepper

1. In a medium skillet, heat the olive oil over medium-high heat; add the garlic and cook until it turns golden, about 1 minute. Immediately remove from heat.

2. Cook the pasta according to package directions. Drain the pasta and place in a large bowl. Add the garlic and oil and remaining ingredients to the bowl and mix together. The arugula will wilt and collapse. Serve immediately.
