PINEAPPLE WITH CARAMEL ICE CREAM

INGREDIENTS

Serves 2


1/2 medium pineapple, peeled, cored, and cut into 1/2"-thick slices

2 tablespoons vegetable oil

1/8 teaspoon salt

1/8 teaspoon freshly ground black pepper

3 cups caramel (or dulce de leche) ice cream

1. In a medium bowl, toss the pineapple with the oil, salt, and pepper. Add to a medium nonstick skillet and sauté over high heat until both sides are well browned, about 8 minutes. Place on a cutting board and chop into bite-sized pieces.

2. Place the ice cream in bowls and top with the warm pineapple chunks.

SALT AND PEPPER ON DESSERT?

Most desserts have a salt component because salt helps the human palate to better recognize different tastes. The desserts are not “salty” but just plain taste better. Adding pepper to this and other desserts brings an interesting note that is hard to pinpoint, but creates a level of complexity and surprise.
