CHIPOTLE CHICKEN CLUB SANDWICH

INGREDIENTS

Serves 2


4 tablespoons mayonnaise

1 teaspoon store-bought chipotle pepper purée

6 slices whole-wheat bread, toasted

1/2 medium ripe avocado, mashed into a paste

1/2 pound cooked chicken breast, thinly sliced

8 slices bacon, cooked until crispy

1 large ripe tomato, thinly sliced

3 or 4 lettuce leaves

1. In a small bowl, mix together the mayonnaise and chipotle pepper purée. Spread the spicy mayonnaise on one side of 4 slices of the bread.

2. Spread the avocado on one side of the remaining 2 slices of bread.

3. Build the sandwiches: top 2 of the mayo-spread bread slices with the chicken. Place an avocado-spread bread slice avocado-side down on top of each. Divide the bacon, tomato, and lettuce on top of each sandwich. Finish by placing 1 of the remaining mayo-spread slices of bread on top of each sandwich.

4. Place 4 toothpicks in each sandwich and slice into quarters.

JOIN THE CLUB

A club sandwich is a triple-decker sandwich with a BLT component. Basically you can make anything into a club sandwich by putting a BLT on top of it. The classics are turkey or roast beef, but do not be confined to these basics. Any grilled fish, cold cut, or even vegetable works great.
