MUDDA’S MINI MEATBALLS

INGREDIENTS

Serves 2


1/2 cup plain bread crumbs

1/4 cup milk

3/4 pound ground beef (or 1/4 pound beef, 1/4 pound veal, 1/4 pound pork)

1 large egg, lightly beaten

1/2 cup grated pecorino Romano cheese

2 cloves garlic, smashed

3 tablespoons chopped fresh parsley

Pinch red pepper flakes

1/4 teaspoon salt

1/4 teaspoon freshly ground black pepper

1/4 cup extra-virgin olive oil

1 (24-ounce) jar marinara sauce

1. In a small bowl, soak the bread crumbs in the milk 10 minutes.

2. Mix the bread crumbs with all the remaining ingredients except the olive oil and marinara. Roll the mixture into 1" balls and chill in the refrigerator 1 hour.

3. In a large skillet over medium heat, heat the olive oil until barely smoking and brown the meatballs well, about 2 minutes per side.

4. Transfer the meatballs to a medium saucepan along with the marinara sauce. Cook 30 minutes over medium heat. Enjoy on their own with toothpicks or with your favorite pasta as a meal.
