MISO SOUP WITH SHRIMP

INGREDIENTS

Serves 2


4 cups water

3 tablespoons miso paste with dashi added

1/2 pound raw medium shrimp, shelled and deveined

1 (12-ounce) box silken tofu, cut into 1/2" cubes

4 scallions, thinly sliced

1. Bring the water to a boil in a medium stockpot; add the miso and whisk well.

2. Add the shrimp and simmer 3 minutes.

3. Divide the tofu and scallions between two bowls and pour the soup over them. Divide the shrimp equally between the bowls.

MISO 101

Miso is a fermented paste made mostly from soybeans. It is a staple in Japanese cuisine. Dashi is a stock made from seaweed and bonito, which is a fish that is dried and often shaved into flakes. You can purchase miso with dashi added to simplify the soup. Otherwise, dashi powder can be purchased separately.
