WHEAT BERRY SALAD

INGREDIENTS

Serves 2


1 cup wheat berries

1/2 cup minced scallions

1/4 cup dried cranberries

1/4 cup minced dried apricots

1/4 cup toasted pistachios

2 tablespoons toasted pine nuts

1/4 cup extra-virgin olive oil

3 tablespoons red wine vinegar

1/4 teaspoon salt, plus more for water

1/4 teaspoon freshly ground black pepper

1. In a small pot, boil the wheat berries in plenty of salted water 30 minutes. Drain and let cool.

2. Toss the wheat berries with the remaining ingredients in a medium bowl and let marinate in the refrigerator about 1 hour before serving.

COMPLEX CARBS

Many people do not understand the difference between simple and complex carbohydrates. In a nutshell, simple carbs are usually refined and ground grains, like white flour, white rice, and pasta. These carbs burn quickly in the body and are not a very efficient fuel. Complex carbs, such as whole grains and brown rice, are much more efficient fuels for the body and are therefore much healthier.
