WEDGE SALAD WITH CHUNKY RUSSIAN DRESSING

INGREDIENTS

Serves 2


1/2 large head iceberg lettuce

1/2 cup ketchup

1/2 cup mayonnaise

1 large hard-boiled egg, finely chopped

1/4 cup finely minced red onion

1/4 cup sweet relish

1/4 cup capers, rinsed

1 tablespoon lemon juice

Dash Worcestershire sauce

Dash Tabasco sauce

1. Cut the iceberg into thick wedges and arrange on two plates.

2. Mix together all the remaining ingredients in a medium bowl.

3. Pour the dressing over the iceberg wedges and serve immediately.

THE PERFECT BOILED EGG

Place large eggs in enough cold water to cover by 1" and bring to a boil. As soon as the water boils, turn off the heat. Let stand for 11 minutes. Drain, moving the eggs around a bit to crack the shells, then cool in ice water. Perfect every time. No green yolks or rubbery whites.
