INGREDIENTS

8 ounces fresh shelled soybeans
1 sheet nori seaweed
1 medium orange, peeled and separated into sections
2 tablespoons soy sauce
1 tablespoon sesame oil
1 tablespoon toasted sesame seeds
1/4 teaspoon salt
1. Boil the beans in salted water in a medium pot 5 minutes. Cool in ice water and drain.
2. Heat one of your burners to medium if it is electric, or light and set a medium flame if you have a gas. Toast the seaweed by passing it over the burner of your stove quickly on each side. The sheet will smell toasty and shrink slightly. Crumble the sheet into small pieces.
3. Mix together all the ingredients in a large bowl and let marinate in the refrigerator 1 hour. Add additional salt if necessary.
