POTATO CROQUETTES WITH SMOKED GOUDA

INGREDIENTS

Serves 2


2 cups leftover mashed potatoes

1 large egg, lightly beaten

2 tablespoons all-purpose flour

1/4 teaspoon salt

1/4 teaspoon freshly ground black pepper

4 cubes smoked Gouda, about 1" each

Olive oil, for frying

1. In a medium bowl, mix together the potatoes, egg, flour, salt, and pepper. Divide into 4 piles and form into loose balls.

2. Press a cube of cheese into the center of each ball and form into patties.

3. Heat about 1" olive oil in a large heavy pan over medium-high heat until almost smoking. Fry the patties about 2 minutes per side. Serve hot.
