PEANUT BUTTER AND CHOCOLATE PANCAKES

INGREDIENTS

Serves 2

1/2 cup sifted all-purpose flour

1 teaspoon baking powder

1/8 teaspoon salt

1 large egg

1/2 cup milk

1 tablespoon creamy peanut butter

1 teaspoon melted butter

11/2 teaspoons butter

1/2 cup chocolate chips

1. In a large bowl, mix together the flour, baking powder, and salt.

2. In a small bowl, beat the egg. Add the milk and combine. Combine this with the flour mixture in the large bowl.

3. In a separate small bowl, add peanut butter and melted butter and mix well. Add to the batter.

4. Melt 11/2 teaspoons butter in a medium nonstick pan or griddle over medium heat. Pour 1/4 cup batter into the pan. Cook until small bubbles form on the surface of the pancake, about 2 minutes. Sprinkle the chocolate chips over the top, then flip the pancake and cook until golden brown. Repeat with the remaining batter.
