INGREDIENTS

1 pound assorted mushrooms
1 cup sherry vinegar
1/2 cup granulated sugar
1/4 cup extra-virgin olive oil
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 tablespoon chopped fresh savory
Place everything except the savory in a small pan. Bring to a boil, then turn off heat and let cool to room temperature. Drain and toss with the savory.
PICKLE IT
This technique of boiling a vegetable in vinegar and sugar is a very simple pickling process. You can try this with almost any vegetables and add any seasonings you wish. This is a great way to preserve vegetables that are overabundant in the garden. Pick up a book on preserving and pickling and have a ball!
