Makes about ¾ cup
This simple mix can be used to season any vegetable, protein, sauce, or vinaigrette. It’s also a killer rub for roasted chicken or ribs or as a crust for quick-seared proteins like tuna.
¼ cup ground cumin
¼ cup ground cardamom
2 tablespoons cinnamon
1 tablespoon ground cloves
1 tablespoon fresh ground black pepper
2½ teaspoons kosher salt
Combine all of the ingredients in a jar with a tight-fitting lid. Stir with a spoon to thoroughly mix. The mixture will keep, tightly covered, for up to 3 months.
