CLASSIC TOMATO SALAD

Serves 4

Make this in the middle of summer when garden tomatoes are bursting with sugary sweetness and tons of juice, which creates a wonderful plate sauce that mixes with the feta and vinaigrette. You will want to lap it up!

2 medium tomatoes, cored and cut into 1-inch pieces

1 small red onion, cut into slivers

8 ounces feta cheese, cut into ½-inch cubes

1 teaspoon dried oregano

1 cup Red Wine Vinaigrette (here)

Kosher salt

Fresh ground black pepper

1 tablespoon extra virgin olive oil

Combine the tomatoes, onion, feta, and oregano in a large bowl and toss. Add the vinaigrette and toss with your hands or a spoon to coat. Season with salt and pepper. Drizzle with the olive oil and serve.
