When you think of food trucks in Salt Lake City, your first thought is likely Chow Truck. The big yellow machine moved its way through the streets of Salt Lake as the first food truck of consequence in the city.
SuAn Chow paved the way for local food trucks to hit the streets in Salt Lake, but the path was by no means easy. She fought the city for this unique dining experience for months. Now many food trucks enjoy the freedoms of serving Salt Lake residents without a brick and mortar, and didn’t have to cut through the red tape.
Chow Truck brings healthier fast food to residents all over the valley. Her success hinges on it. The menu is simple, which in her opinion is the best kind of menu. Haute Asian cuisine dialed and perfected, served fast and fresh, is the specialty of her rolling restaurant. Behind the glass window and ice buffet of drink choices, the service system is quick and efficient. Long waits are not part of the experience, only tasty food.
Pick a protein, like the coconut-lemon grass chicken or panko-dusted tofu, then select either a taco, slider, or salad to pair. The Asian Spiced Root Chips are the perfect side: crispy, colorful, beautiful vegetables with a spice you can’t quite put your finger on but can’t take your hands off.
SuAn Chow opened the market for food trucks in SLC, and now the streets rejoice.
(SERVES 10)
For the root vegetables:
2 medium-sized yams
2 medium-sized Yukon Gold potatoes
2 medium-sized purple potatoes
2 medium-sized red beets
1 medium-sized lotus root
Canola or soy oil, for frying
For the seasoned salt:
2 tablespoons kosher salt
2 teaspoons white pepper
2 teaspoons Chinese five-spice powder
To prepare the root chips: Thinly slice each root vegetable with a mandoline, then deep fry one root vegetable at a time in canola or soy oil at 220°F until crisp. Remove and drain excess oil on paper towels.
To prepare the seasoned salt: Stir salt, pepper, and five-spice powder until well combined. Shake the seasoned salt on chips while hot.
FOOD CARTS
While tacos carts have been on the scene in Utah for quite some time, the more modern food cart trend hit the city only recently. The Chow Truck, serving haute Asian cuisine such as tacos, sliders, and salads, was the first to pave the way. While the trucks jaunt around the city throughout the week, you can count on a small gathering of food carts convening at the Gallivan Center every Thursday during lunchtime. Here are a few food trucks to keep an eye out for:
Submarinos: serves sandwiches and soup made with from-scratch ingredients.
Off the Grid: serves waffles topped with untraditional ingredients like slow-roasted pork, local Beehive cheddar cheese, or spicy grilled chicken.
Gravy Train: provides a taste of the French Canadian classic, poutine: a generous helping of french fries, cheese curds, and gravy.
Cup Bop: serves Korean barbecue in a takeaway cup with your choice of meat, veggies, and rice or noodles.
A Guy and His Wife Grilled Cheese: offers gourmet grilled cheese sandwiches with fresh-cut curly fries.
Saturday’s Waffle: features an Air-stream trailer serving up gourmet Liège waffles.
Lewis Brothers: serves up unique burgers with flavorful additions like kimchi, as well as banh mi sandwiches.
Waki Paki: gives a taste of Pakistani street food.
Better Burger: features grass-fed beef burgers, turkey burgers, and one-of-a-kind veggie burgers.
