23. Goddess Calypso Falafel

Goddess Calypso is the goddess of the sea. Apparently, she fell in love with Davy Jones and gifted him with the ship flying Dutchmen, along with a responsibility to collect the souls of people who died at the sea to send them beyond the world. This falafel reminds me of her and her pure soul. She lives for love and dies for it. The classic falafel is kept simple to pay homage to her character.
Ingredients
Cooking time  - 55 minutes
Serving size - 4
Instructions
1. First, in a food processor, combine the drained soaked chickpeas, with parsley, cilantro, salt, pepper, green chili, onion, garlic, cumin, cardamom powder. Blend it into a paste.
2. Once done, add in the chickpea flour and the baking soda as per the measurements listed. Mix it into the mixture.
3. Next, keep this mixture in the refrigerator for about 20 to 30 minutes.
4. Once the mixture is cooled, scoop out small balls from it, enough for 4 to 5 people. Flatten it into Patti shape.
5. Heat some oil in a pan. We are shallow frying it but you can deep fry it if you want to. Shallow fry the Pattie over a low flame until it's Brown from all the sides.
6. Serve it hot with your desired dressing.
