25. Egg Maelstrom Drop Soup

Egg drop soup is a very famous soup delicacy. It is a common soup in China, but since we are talking about a maelstrom, this soup fits perfectly in the explanation. When the Goddess Calypso was betrayed by Davy Jones, she got so furious that she created a maelstrom, a whirlpool. The egg drop soup also has an egg whirlpool created in it to add texture. Try this wonderful egg soup recipe and experience the whirlpool curse yourself.

Ingredients

• 1/2 tablespoon minced ginger
• 2 cups chopped green onions
• 3 teaspoons soy sauce
• 2 teaspoons sesame oil
• 4 cups chicken stock
• 2 eggs, beaten
• 3 teaspoons cornstarch
• 2 teaspoons pepper
• Salt to taste
• 3 teaspoons water

Cooking time  - 35 minutes

Instructions

1. In a medium-size pan, heat some oil, add in the ginger, and sauté it for a few minutes.

2. Add in the chicken stock. Then, let it simmer at a low flame for a few minutes.

3. Next, mix the cornstarch with 2 teaspoons of water and pour the mixture into the boiling chicken stock, stirring continuously.

4. Once the stock comes to boil, using a ladle or spatula to stir the soup in a spiral motion to make a circle. Pour in the beaten egg while stringing in a similar motion. Creating a whirlpool in it.

5. Then, add in the soy sauce, salt, pepper, and 1 cup of green onions and cook for a few minutes.

6. Serve it hot and garnish it with the remaining green onions on top.
