Breakfast pops are a treat in the summer, whether you’re heading out the door or just lazing out on the deck. However, there’s no need to buy Popsicle molds. Use very small, so-called “snack-size,” 1-cup resealable bags, then freeze to make a quick and easy version of Push Pops. (Well, more like peel pops, as you’ll see.) To enjoy one, use kitchen shears to snip off one of the short ends of the pop. Peel down the plastic to reveal some of the treat, using the bag as a mess-free way to hold the cold pop (and to catch the drips). Keep peeling the plastic down—or pushing the pop up—as you enjoy.
• Seal the bags carefully, pressing out any additional air.
• To freeze, lay them along the inside sides of an 8-inch square baking pan, so that the liquid rests on the bottom of the pan and the top of each bag folds over one of the pan’s rims. Then secure the tops of the bags to the pan with Scotch tape. (The accompanying picture may give you a better idea how this process works.)
• Once hard, take the bags out of the baking dish and store flat in the freezer for up to 4 months.
