Makes 4 pops
Here’s a smoothie in Popsicle form! Feel free to substitute any nut or seed butter for the peanut butter. If desired, add up to 2 tablespoons protein powder to the mixture in the blender.
1 cup regular or low-fat vanilla yogurt (do not use Greek yogurt)
1 small ripe banana, peeled and cut into chunks
2 tablespoons natural-style creamy peanut butter
2 tablespoons honey
½ cup fresh blueberries, roughly chopped
1. Put the yogurt, banana, peanut butter, and honey in a blender. Cover and blend until smooth. Stir in the blueberries.
2. Pour about ½ cup into each of 4 snack-size, 1-cup resealable plastic bags and seal. Roll lengthwise to form a tube of filling at one end (see photo on left). Freeze overnight (at least 12 hours), or for up to 2 months.
Voilà! Need ripe bananas for a dessert (or a smoothie)? Ripen them by baking them on a baking sheet in a 325°F oven until the skins are dark and the fruit is soft, about 6 minutes. Slit the peel lengthwise to scoop out the softened fruit.
