Makes 4 pops
These have a tropical feel. The avocado adds richness without making the pops savory. The riper the avocado, the better—choose ones that are soft to the hand but not mushy. Check under the little nub at one end. The flesh should appear dark green, not light green or brown.
1 cup full-fat coconut milk
1 ripe avocado, peeled and pitted
3 tablespoons unflavored pure soy protein powder
2 tablespoons honey
2 tablespoons fresh lime juice
1. Blend the coconut milk, avocado, protein powder, honey, and lime juice in a covered blender until smooth.
2. Pour about ½ cup into each of 4 snack-size 1-cup resealable plastic bags and seal. Roll lengthwise to form a tube of filling at one and (see photo here). Freeze overnight (at least 12 hours), or for up to 2 months.
