Cheese-Covered Turnip Fries

Okay, this one’s a little far afield. Turnips? As fries? Why not! Turnips are a little bitter but have a sweet, earthy flavor. By tossing them with plenty of grated cheese, they may even appeal to picky eaters. No promises. And if not, there’s more for you.

6 medium-large turnips (about 3 pounds), peeled

3 tablespoons olive oil

1 teaspoon table salt

½ teaspoon grated nutmeg

¼ teaspoon cayenne

½ cup finely grated Parmigiano-Reggiano (about 1 ounce)

1. Position the rack in the center of the oven; heat the oven to 400°F.

2. Slice a small piece off one end of each turnip so they’ll sit firm on your cutting board. Use an apple slicer to push down through each, slicing it into wedges.

3. Place the wedges in a medium roasting or broiler pan. Add the oil, salt, nutmeg, and cayenne. Toss well to coat evenly.

4. Roast, turning the wedges once, until lightly browned and crisp at the edges but tender at the centers, about 35 minutes.

5. Sprinkle the wedges with the grated cheese. Set aside for a couple minutes as the cheese melts, then serve.
