Preparation Time: 15 minutes

Serves: 4 cups
Ingredients
1 cup coarse polenta
4 cups water or broth
1/2–1 tsp salt (as needed)
Add-Ins (If desired)
1-2 tsps (taco, Italian, cajun) any of your desired spices
¼ cup chopped fresh herbs
Vegan cheese
Method
1. Add salt, polenta and water into a pressure cooker pot.
2. Whisk in 1/2-1 tsp seasonings into the pressure pot until combined.
3. Place the lid over the pressure cooker, secure and set steam release handle/vent to "sealing".
4. Cook for 5 minutes on high pressure.
5. After cook time has been reached, let the pressure cooker pressure release naturally for 10 minutes before sliding steam release handle/vent to "venting" position for quick release until the floating valve (metal pin) drops down.
6. Open the pressure pot lid.
NOTE: Make sure pressure has been released before opening the lid of the pressure pot.
7. Stir until completely combined, check for seasoning and amend seasoning and salt as necessary.
8. Add the chopped herbs and vegan cheese and stir until combined.
9. Serve and enjoy.
