Ingredients
½ teaspoon fenugreek seeds powder
½ teaspoon ground cumin
½ teaspoon black pepper
½ teaspoon turmeric
½ teaspoon coriander
1/3-½ teaspoon cinnamon
½ teaspoon mustard
1 teaspoon oil
1/3-½ teaspoon cayenne or (some cayenne + some paprika)
3 cups chopped mixed vegetables (such as cabbage, potatoes, zucchini, peppers, green beans, carrots, cauliflower, etc)
3 minced garlic cloves
1/3 cup green peas
¾ teaspoon salt, or to taste

Method
1. Add the spices into the bowl, stir to combined and set aside.
2. Add oil in a pressure cooker pot, and select the saute/brown setting.
3. Add the garlic into the pressure pot and cook until the garlic becomes golden.
4. Add the spice mixture from the bowl into the pressure cooker and saute for 30 seconds.
5. Add the vegetables excluding the peas, into the pressure pot.
6. Season with salt and stir until combined.
7. Add a splash of water into the pressure pot.
8. Place the lid over the pressure cooker, secure and set steam release handle/vent to "sealing".
9. Cook for 1 minute on high pressure.
10. After cook time has been reached, slide steam release handle/vent to "venting" position for quick release until the floating valve (metal pin) drops down.
11. Open the pressure pot lid.
NOTE: Make sure pressure has been released before opening the lid of the pressure pot.
12. Fold in the peas into the pressure cooker.
13. Check for seasoning and amend salt as necessary.
14. Place the lid over the pressure cooker pot and set aside for 5 minutes.
15. Optional, saute for few more minutes if the vegetables are not well cooked.
16. Serve, garnished with lemon and cilantro.
