Vegan Cheesy Sauce (Pressure Cooker)

Preparation Time: 5 minutes

Cook Time: 5 minutes

Serves: 4-6 servings

Ingredients

2 cups potato, (peeled & chopped)

1/2 cup onion, chopped

1 cup carrot, chopped

1/2 cup raw cashews

3 (peeled & left whole) garlic cloves

1 tsp turmeric powder or 1 tbsp turmeric, chopped

1/2 cup nutritional yeast

2 cups water

1 tsp salt

Method

1. Add every ingredient into the pressure cooker pot.

2. Stir until combined.

3. Place the lid over the pressure cooker, secure and set steam release handle/vent to "sealing". 

4. Cook for 5 minutes on high pressure.

5. After cook time has been reached, slide steam release handle/vent to "venting" position for quick release until the floating valve (metal pin) drops down.

6. Open the pressure pot lid.

NOTE: Make sure pressure has been released before opening the lid of the pressure pot.

7. Set aside for 10-15 minutes before transferring into a high speed electric blender.

8. Process for 2 minutes until a fine, smooth and creamy consistency is reached.

9. Serve and enjoy.
