Lentil Stew & Sweet Potato (Moroccan Recipe)

Preparation Time: 10 minutes

Cook Time: 25 minutes

Serves: 2-4 servings

Ingredients

1 diced large onion

Homemade Moroccan spice blend, as necessary

3 minced garlic cloves

2 (peeled & diced) carrots

1 (peeled & cut into 1 inch cubes) sweet potato

1 cup brown or green lentils

1 chopped celery stalk

2 cups vegetable broth

1/2 cup red lentils

1 can tomatoes, diced

1/4 cup raisins

Diced greens (if desired)

Homemade Moroccan Spice Blend

1/2 teaspoon cinnamon

1 teaspoon turmeric

1 teaspoon cumin

1 teaspoon paprika

1/4 teaspoon ginger

2 teaspoon coriander

A pinch cloves

1/2 teaspoon black pepper

A pinch chili flakes

Method

1. Add all the spice blend ingredients into a well covered sealed jar.

2. Shake until well combined and set aside.

3. Add little amount of water or broth into a pressure pot and add the onions.

4. Saute for 2-3 minutes until translucent and softened.

5. Add the garlic into the pressure pot and cook until fragrant, for 1 more minute.

6. Add raisins, celery, carrots, sweet potatoes and 1/2 of the homemade spice blend into the pressure pot.

7. Cook sweet potato mixture for 1-2 minutes before adding the broth and lentils and stir until well incorporated.

8. Place the lid over the pressure cooker, secure and set steam release handle/vent to "sealing". 

9. Cook for 10 minutes on high pressure.

10. After cook time has been reached, let the pressure cooker pressure release naturally until the floating valve (metal pin) drops down.

11. Open the pressure pot lid.

NOTE: Make sure pressure has been released before opening the lid of the pressure pot.

12. Add tomatoes and the reserved spice blend into the pressure pot and select the saute/brown button to saute.

13. Saute and stir frequently for 5 minutes.

14. Check for seasonings and amend as necessary.

15. Stir in greens until combined and serve alone or over quinoa.
