Ingredients
2 (28 ounce) cans tomatoes, crushed
1/2 cup red lentils (picked, debris removed & rinsed)
1 (approx. 2 cups) large {diced} sweet potato
1 teaspoon salt
2-3 minced garlic cloves
1 1/2 cups water
Method
1. Add salt, garlic, sweet potatoes and the rinsed lentils into a pressure cooker pot.
2. Select the saute/brown setting on the pressure cooker and saute until garlic becomes fragrant, for 1-2 minutes.
3. Add water and the crushed tomatoes into the pressure pot and stir until well combined.
4. Scrape pressure pot insides with a wooden spatula to loosen stuck bits of lentils.
5. Place the lid over the pressure cooker, secure and set steam release handle/vent to "sealing".
6. Cook for 13 minutes on high pressure.
7. After cook time has been reached, let the pressure cooker pressure release naturally until the floating valve (metal pin) drops down.
8. Open the pressure pot lid.
NOTE: Make sure pressure has been released before opening the lid of the pressure pot.
9. Stir again with the wooden spatula until completely combined and process sauce mixture with an immersion blender.
10. Serve.
