Serves: 6-7 tacos
Ingredients
2 large guajillo chiles (soaked for 15 minutes in hot water, stem & seed box removed)
1 bay leaf
1 teaspoon oil
7 finely chopped garlic cloves
1 (chopped or sliced thin) large onion
1 teaspoon cumin, ground
2 chipotle chile in adobo sauce (1 for less heat)
1 teaspoon chili powder blend or ½ teaspoon smoked hot paprika
½ teaspoon oregano, dried
¼ teaspoon salt, or additional as necessary
¼ teaspoon ground cinnamon, ¼ tsp ground cloves
1 teaspoon apple cider vinegar
¾ cup vegetable broth or water
¼ teaspoon vegan sweetener
1-3 teaspoon lime juice
8 ounces (cremini, white or a combination with others) chopped or sliced mushrooms

Method
1. Add oil into a pressure cooker pot and select the saute/brown setting.
2. Add salt, garlic, onions and the bay leaf into the hot oil in the pressure pot and cook for 5 minutes, until translucent.
3. Remove 1/2 of the mixture from the pressure pot and transfer into a high powered blender.
4. Add salt and mushrooms into reserved onion mixture in the pressure cooker pot.
5. Add the guajillo chile into the blender.
6. Add the remaining sauce ingredients excluding the lime and vinegar into the electric blender.
7. Process the mixture in the blender until a smooth consistency is reached.
8. Return blended mixture into the pressure pot and stir until incorporated.
9. Add 1/4-1/3 cup water into the pressure cooker pot and stir until completely combined.
10. Place the lid over the pressure cooker, secure and set steam release handle/vent to "sealing".
11. Cook for 5 minutes on high pressure.
12. After cook time has been reached, let the pressure cooker pressure release naturally for 10 minutes before sliding steam release handle/vent to "venting" position for quick release until the floating valve (metal pin) drops down.
13. Open the pressure pot lid.
NOTE: Make sure pressure has been released before opening the lid of the pressure pot.
14. Serve with spiced black beans in the tacos or serve with onion, peppers, roasted vegetables and beans.
