Ingredients
2 tablespoons olive oil
1 medium-large cauliflower head (washed, leaves trimmed off & chopped into florets)
½ teaspoon parsley, dried
¼ teaspoon salt (or more, as necessary)
Seasoning (If desired)
¼ teaspoon cumin
¼ teaspoon paprika
¼ teaspoon turmeric
Serve With
Lime wedges (or lime juice)
Fresh cilantro
Method
1. Place a steamer basket into a pressure cooker pot.
2. Add 1 cup water into the pressure cooker pot and add the cauliflower into the steamer basket in the pressure pot.
3. Place the lid over the pressure cooker, secure and set steam release handle/vent to "sealing".
4. Cook for 1 minute on high pressure.
5. After cook time has been reached, slide steam release handle/vent to "venting" position for quick release until the floating valve (metal pin) drops down.
6. Open the pressure pot lid.
NOTE: Make sure pressure has been released before opening the lid of the pressure pot.
7. Take out cauliflower to a platter.
8. Get rid of the water in the pressure pot.
9. Add oil into the pressure cooker pot and add the cooked cauliflower.
10. Select the saute/brown setting on the pressure pot.
11. Mash cauliflower with a potato masher.
12. Add all or some of the seasonings and spices into the pressure pot as you stir and saute.
13. Add the parsley into the pressure cooker pot, and season with salt.
14. Serve into plates with lime juice and fresh cilantro.
15. Enjoy.
