Whole spices: Just a few—black peppercorns in a grinder, cumin, coriander, fennel seed, mustard seed, nutmeg, sesame seeds, vanilla beans (just slit and scrape out the vanilla seeds—much more flavor than extract)

LASTS FOREVER—GRATE AS NEEDED
