MAKES 1 CUP
1½ tablespoons coriander seeds
1 tablespoon caraway seeds
2½ tablespoons coconut sugar or brown sugar
2 tablespoons sea salt
2 tablespoons freshly ground black pepper
2 tablespoons granulated onion
1 tablespoon granulated garlic
1 tablespoon smoked paprika
2 teaspoons mustard powder
1 teaspoon cayenne pepper
Toast the coriander and caraway in a dry pan over medium heat until fragrant, 1 to 2 minutes, shaking the pan now and then. Let cool slightly, then grind in a spice grinder or clean coffee mill to a somewhat coarse grind.
OR USE A MORTAR AND PESTLE!
Transfer to a small bowl and mix in the remaining ingredients.
