PAINTED DIJON POTATOES

Cooking is an art. One of the best ways to showcase that fact is to paint while you cook. Pick up a few small flat paint brushes from a hardware store. Then paint some sauce onto a plate before adding the rest of the food. Or paint a flavorful glaze onto vegetables. Here, we paint a yellow swath of Dijon mustard onto red-skinned potatoes. The rest of the seasonings hide secretly beneath the potatoes on the pan. Flavor and color—voilà!

2 pounds red potatoes (see Pro Tip), unpeeled

¼ cup Earth Balance butter (at room temperature) or olive oil

4 cloves garlic, sliced thin into chips (about 1 tablespoon)

2 tablespoons chopped fresh rosemary, plus some sprigs for garnish

1 teaspoon sea salt

1 tablespoon freshly ground black pepper

½ cup Dijon mustard

image Preheat the oven to 400ºF. Scrub the potatoes, then cut each in half.

image Smear the butter or oil all over a rimmed baking sheet. Arrange the garlic slices in a single layer over the butter. Sprinkle on half of the chopped rosemary, salt, and pepper.

image Evenly arrange the potato halves cut-side down on the seasoned buttered pan, trying to completely cover the butter. Grab that paint brush and paint the red potato tops generously with all the mustard. Season with the remaining chopped rosemary, salt, and pepper.

image Pop the pan in the oven and cut the heat to 350ºF. Roast until the potatoes are tender and golden brown on the bottoms, about 30 minutes. You should be able to slide a fork in and out of a potato easily.

image Arrange on a platter or plates and garnish with rosemary sprigs.
