A classic baked potato is one of the easiest, most satisfying dishes out there. For a potato bar, make a bunch and set them out with the toppings and options below.
Russet potatoes, scrubbed, pricked with a fork, and baked naked at 375ºF for 1 hour
Field Roast Italian or Mexican chipotle sausage, broken up and pan-seared in a little oil
TO MAKE THE SAUSAGE BITS EXTRA-CRISPY, SEAR IN AN OVEN-SAFE PAN, THEN BAKE WITH THE POTATO FOR 20 MINUTES.
Steamed or roasted broccoli florets
Wicked Healthy Cheese Sauce (here)
Sliced green onion
OPTIONS
Brush the spuds with oil before baking for a crisp skin.
Use sweet potatoes instead of russets.
Instead of sausage, use a few tablespoons crumbled Plant Bacon (here) or roasted mushrooms.
Instead of broccoli, go for steamed or roasted cauliflower florets.
BETTER YET, USE ALL 3.
Add diced grilled asparagus.
Add some herbage like chopped fresh cilantro, parsley, thyme, and/or rosemary.
