Place the lemon and lime juices, sugar and lime slices in a non-reactive saucepan over medium heat and simmer for 1–2 minutes or until the sugar has dissolved. Remove from the heat and leave to cool for 5 minutes.

Add the tonic and gin to the lemon syrup and stir to combine. Pour into 10 x 60 ml (2 fl oz/¼ cup) popsicle moulds and add a lime slice to each. Cover with plastic wrap and insert a stick through the plastic into each pop. Freeze for 8–10 hours or until completely frozen.

85 ml (2¾ fl oz) lemon juice

60 ml (2 fl oz/¼ cup) lime juice

165 g (5¾ oz/¾ cup) caster (superfine) sugar

10 small lime or lemon slices

300 ml (10½ fl oz) tonic water

65 ml (2¼ fl oz) gin

10 popsicle sticks
