Winter Squash, Feta & Adzuki Bean Packages

Served crisp, golden, and freshly baked from the oven, these fantastic feta, bean, and winter squash-packed phyllo packages provide a wholesome, meat-free lunch or dinner for all the family to enjoy.

4 cups ¾-inch winter squash cubes (about 1 pound), such as buttercup squash, butternut squash, acorn squash, or pumpkin

4 shallots, quartered

1 teaspoon smoked paprika

1 tablespoon olive oil

¾ cup drained and rinsed, canned adzuki beans

2 tablespoons coarsely chopped parsley

zest of 1 lemon

⅔ cup crumbled feta cheese

3 sheets of phyllo pastry, thawed if frozen

3½ tablespoons butter, melted

pepper, optional

1 tablespoon snipped watercress, to garnish

green salad, to serve, optional

1. Preheat the oven to 400°F. Put the winter squash and shallots into a shallow roasting pan in an even layer and sprinkle with the paprika. Drizzle with the olive oil and mix well. Roast in the preheated oven for 20–25 minutes, or until the squash is slightly golden and soft. Keep the oven on.

2. Put the squash mixture into a large bowl. Using a potato masher, mash until the cubes have broken down. Stir in the adzuki beans, parsley, lemon zest, and feta cheese. Mix until all the ingredients are well combined. Season with pepper, if using.

3. Cut a phyllo sheet in half to create two long lengths and brush one pastry length all over with melted butter. Cover the remaining pastry with a damp dish towel to keep it fresh.

4. Spoon one-sixth of the squash mixture on one end of the pastry length. Fold this end up to meet one side, starting the shape of a triangle. Fold the bottom point of the pastry up, sealing in the filling, then complete the triangle by folding again in the opposite direction. Keep folding until you reach the top and lightly brush with a little more melted butter. Repeat with the other sheets of phyllo until you have six triangles.

5. Place the packages on a baking sheet and cook for 25 minutes, or until golden. Garnish with watercress and serve immediately with a green salad, if desired.
