2 garlic cloves, crushed
¼ cup red wine
2 tablespoons light brown sugar
1 tablespoon soy sauce
1 teaspoon sesame oil
½ teaspoon ground cinnamon
¼ teaspoon ground cloves
1 star anise, broken into pieces
½ teaspoon pepper
12 ounces pork tenderloin
3¼ cups cooked green beans, to serve
Gingered apples
4 cooking apples, such as Granny Smiths, coarsely chopped
1 tablespoon rice vinegar
1 tablespoon packed
light brown sugar
¼ cup apple juice
1 tablespoon finely
chopped fresh ginger
1. In a large bowl, combine the garlic, wine, brown sugar, soy sauce, sesame oil, cinnamon, cloves, star anise, and pepper. Add the pork and toss to coat. Cover and refrigerate overnight.
2. Preheat the oven to 375°F. Heat a nonstick skillet over high heat. Remove the pork from the marinade and sear in the hot pan. Cook for about 8 minutes, or until browned on all sides. Transfer the pork to an ovenproof dish and drizzle with half of the marinade. Roast in the preheated oven for 15 minutes.
3. Turn the meat, drizzle the remaining marinade over the top, and roast for 30 minutes, or until cooked through (insert the tip of a sharp knife into the center of the meat and check that there is no pink meat).
4. Meanwhile, make the gingered apples. In a saucepan, combine all the ingredients and cook over medium-high heat, until the liquid begins to boil. Reduce the heat to medium-low and simmer, stirring occasionally, for about 20 minutes, or until the apples are soft.
5. Remove the pork from the oven and set aside to rest for 5 minutes. Slice the meat and serve with the apples and green beans.
