½ Galia or honeydew melon, peeled, seeded, and thickly sliced
3 cups baby spinach
2 large stems of fresh flat-leaf parsley
3 large stems of fresh mint
small handful of ice, optional
1. Feed the melon through a juicer, followed by the spinach, parsley, and two stems of the mint.
2. Fill a glass halfway with ice, if using, then pour in the juice.
3. Decorate with the remaining stem of mint and serve immediately.
