Serves 6 to 8
This classic salad takes no time to prepare. The dressing makes it delicious, and we like adding cherry tomatoes for color.
2 garlic cloves, minced
2 tablespoons fresh lemon juice
1 tablespoon anchovy paste
1 teaspoon Dijon mustard
Sea salt
ΒΌ cup extra-virgin olive oil
1 head romaine lettuce
Cherry tomatoes
Freshly ground black pepper
Grated Parmesan cheese
Combine the garlic, lemon juice, anchovy paste, mustard, and a pinch of salt in a blender and mix. With the blender running, slowly drizzle in the olive oil and mix until smooth.
Arrange the lettuce leaves and tomatoes on a platter or toss together in a salad bowl. Drizzle with the dressing, add a few grinds of black pepper, and sprinkle the grated Parmesan cheese over the top.
