4 (4-ounce) sweet or hot Italian sausage
1 cup Marinara Sauce (here)
½ teaspoon red pepper flakes
½ teaspoon crushed fennel seeds
1½ cups shredded mozzarella (about 6 ounces)
¼ cup grated Parmesan cheese
Remove the sausage meat from the casings. Crumble the meat into a saucepan and sauté over medium heat until no longer pink, about 10 minutes. Stir in the marinara sauce, red pepper flakes, and fennel seeds. Cook for 5 minutes. Let cool, then skim the fat from the top.
When filling the calzones, cover half of each dough circle with the mozzarella cheese, leaving a ½-inch border around the edge. Top with the sausage mixture and sprinkle with the Parmesan cheese. Proceed with the main recipe.
