Watercress, Pear, and Walnut SALAD with Balsamic Glaze

Serves 6 to 8

This refreshing salad is one of our favorites. The crunch factor is high, the blend of flavors is delicious, and the salad looks great on the plate.

1 cup balsamic vinegar

3 pears, cored, and cut into chunks or thinly sliced

4 cups watercress leaves

3 bunches arugula

Sea salt

Freshly ground black pepper

½ cup crumbled gorgonzola cheese, crumbled goat cheese, or cubed fontina cheese

½ cup chopped walnuts

Pour the balsamic vinegar into a saucepan and cook over medium-low heat until reduced to ½ cup, about 15 minutes.

Combine the pears, watercress, and arugula in a large serving bowl.

Drizzle with the balsamic glaze and toss to coat. Season with salt and pepper to taste.

Scatter the crumbled cheese and walnuts on top.
