Coleslaw

Makes 4 to 6 servings

1. In a large bowl, mix together the mayonnaise, vinegar, oil, sugar, salt, celery seeds, and pepper.

2. Add the cabbage and mix well to incorporate all of the ingredients.

3. Serve immediately, or cover and refrigerate until ready to serve.

Think Like a Chef

The term “coleslaw” does indicate a salad made of shredded cabbage. But over time, in the culinary world, the term “slaw” has evolved to mean almost any type of shredded vegetable salad. So, to “think like a chef” and make a “slaw,” make sure your veggies are grated (carrots or peeled broccoli stems) or cut into fine slices to create a shred (kale or cabbage).

Carrot Slaw: carrots + honey + mustard

Mango Slaw: mangoes + red cabbage + cilantro + lime juice

Spicy Broccoli Slaw: shredded broccoli + shredded cauliflower + carrots + Sriracha
