Tomato-Parmesan Salad Dressing
Makes 1¼ cups
- ½ cup chopped tomato
- ¼ cup extra-virgin olive oil
- ¼ cup grated Parmesan cheese
- 2 tablespoons water
- 2 teaspoons chopped garlic
- 1 teaspoon mustard (any type)
- ½ teaspoon sugar
- ¼ teaspoon salt
- ⅛ teaspoon ground black pepper
1. In a blender, combine the tomato, oil, cheese, water, garlic, mustard, sugar, salt, and pepper. Puree until the dressing is very smooth.
2. Transfer to a covered container and refrigerate until ready to use.
