Combine the tomatoes, cheese, garlic, sugar, oregano, and salt in a blender and process until smooth, about 1 minute. You’ll need about ¾ cup of sauce for each pizza. Extra sauce can be simmered for 30 minutes to thicken and then stored in an airtight container in the refrigerator.
How much sauce and cheese do I need?
Pour the sauce in the middle of the pizza and, using the bottom of a ladle, move the sauce around in a circular motion. This technique ensures that the center of the pie is not too heavy and saturated with sauce.
