Makes 5 to 6 servings
1. Wash the vegetables, if needed, and cut them into slices about ½ inch thick and place in a medium bowl.
2. To make the marinade, combine the oil, soy sauce, lemon juice, and garlic powder. Pour the marinade over the vegetables, coating them evenly.
3. Heat the grill to medium-high heat.
4. Place the vegetables on the grill and cook for several minutes per side, until they are tender. Serve immediately.
